Pork Shoulder: cut used in pulled pork, slow cooked and tender

Confit: cooking the product in fat to help retain moisture & flavor

Sugo: pasta dish using the braising liquid as the sauce

Mostarda: a fruit & mustard jam, typically sweet with a touch of heat
